  • Cauliflower- The type of cauliflower you pick is very important in this recipe. To produce the best texture in your crust, use frozen and thawed cauliflower florets.
  • Almond Flour- This is the

With cauliflower becoming a new staple in low carb cuisine, there are lots of options now available in your regular grocery store. You can either use fresh cauliflower, frozen, or pre-riced/packaged. Ultimately they are all going to be cooked and prepared the same way. We have found that the best option though is frozen cauliflower.

How to Make Keto Cauliflower Pizza Crust

  • Preheat the oven to 400° F and place a pizza stone in the oven to heat. If you do not have a pizza stone, a regular sheet pan will be fine and no need to heat it.
  • Grate the cauliflower on a box grater or save time and use a food processor. Add grated cauliflower to a large microwave safe bowl. Cover with plastic wrap.
  • Cook cauliflower in the microwave for 4-5 minutes until tender. Carefully remove from the microwave with oven mitts or a towel to protect your hands.  Let cool.
  • Place cooked and cooled cauliflower in a kitchen towel and ring out all of the excess moisture over your sink.
  • Add drained cauliflower back to the bowl and add remaining ingredients.
  • Remove pizza stone from the oven and carefully press the crust mixture into a ¼” circle.
  • Bake for 20 minutes. Remove from the oven and add toppings. Bake for an additional 10-12 minutes until the crust is golden brown and the cheese has melted.

This pizza crust is great to prepare ahead of time and can be frozen and stored for up to 3 months. It can be difficult to store a large crust, so we suggest making two smaller, personal sized ones.  Once you have baked your crusts, remove them from the oven and let them cool completely. Separate them using a sheet of parchment paper and place them in a large zip lock bag or freezer safe container.

  • 5 cups (or 1.5 pounds of) cauliflower
  • 1/2 cup mozzarella cheese (grated)
  • 2 tablespoons almond flour
  • 1 tablespoon coconut flour
  • 1 tablespoon flax meal
  • 1 egg
  • 2 teaspoons of Italian Seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions
