Keto Turtles that are made with perfectly chewy keto caramel, stevia sweetened chocolate, and delicious pecans! These candies will fool even your non-keto family and friends and are sure to be a hit!



A couple of months ago, if you follow me on Instagram, you'll know that I sacrificed more than 8 sticks of butter in pursuit of creating the perfect chewy keto caramel recipe, and when I finally did it I created my first ever recipe video in honor of it!
Yep, I made Chewy Keto Caramel and it was almost an instant hit!

That's exciting, but what's so amazing is that I now get to create some really awesome Keto copycat recipes of our favorite non-keto candies and treats.
You will need a couple special ingredients to make these turtles, but luckily they're readily available on Amazon and at a lot of local health food stores.

- Allulose (this is not available in Canada, see below for an alternative)
- BochaSweet (Canadian Allulose Alternative)
- Lily's Chocolate Chips
- Molasses
You will also need to have some good-quality Pecan Halves on hand. I got mine from Costco, because I love the quality and the cost.
Before we get onto the recipe for Keto Turtles, I want to say a quick word about the candies you see in the sugar-free section of the grocery store. They taste very good, but if you flip them over and read the ingredients you'll notice a whole lot of chemicals and one very dangerous sweetener: malitol (or sucralose, aspartame, etc). Not only does malitol raise blood sugar more than regular sugar, it also causes gastric distress!
My recipe won't cause that – and you'll be able to recognize every ingredient that goes into them!
Here's what you'll need:
For The Caramel:
1/2 cup Heavy Cream
3 T Butter
1 1/2 cups Allulose (or Bocha Sweet, in Canada)
3 T Water
Pinch of Sea Salt
1/2 tsp. Molasses
Splash of Vanilla
For The Turtles
60 Pecan Halves
1 cup Lily's Chocolate chips
Directions:
Make The Caramel:
Heat butter and heavy cream in a small saucepan over medium heat until the butter melts. Set aside and keep warm.
In a medium saucepan, combine Allulose, water, sea salt, molasses, and vanilla. Stir to combine, then heat over medium-high heat until the temperature reaches at least 350 degrees F, and the color just starts to change.
Stir the the warm cream and butter into the Allulose mixture you just heated. Mixture will bubble, but keep stirring and it will settle down.
Cook the entire mixture over medium-high heat until the color deepens into an amber caramel color, stirring constantly. Test for the consistency you desire by placing some caramel on a spoon in ice water. When the caramel cools in the ice water to the desired consistency, pour into a pan lined with butter parchment paper. Chill in the refrigerator until cool. Enjoy!
Assemble The Turtles:
Line a large baking sheet with parchment paper. Using a spoon, place about 1 T of the Chewy Keto Caramel about 3 inches apart on the paper. The caramel may need to cool for a few minutes before you assemble the turtles, so place the baking sheet in the refrigerator for up to 30 minutes until the caramel is sticky.
Meanwhile, place the Lily's Chocolate Chips in a small microwave safe dish and microwave by 30-second intervals, stirring in between, until all the chips are melted.
Take the baking sheet and caramel out of the refrigerator, and place the tops of 3 pecan halves into each spot of caramel. Top with enough chocolate to cover the caramel and most of the turtles, then let set until the chocolate is cool and firm.
