Vietnamese Grilled Lemongrass Chicken

Ingredients

2 tbsp fish sauce

2 lemongrass stalks, bruised and white part finely chopped

2 garlic cloves, finely chopped

1 tsp caster sugar

½ tsp ground white pepper

8 skin-on chicken thigh fillets

Steamed rice or salad, to serve

Sliced cucumber to serve

 

Nuoc cham

3 tbsp fish sauce

2 tbsp white vinegar

3 tbsp sugar

2 tbsp lime juice

1 long red chilli, finely chopped

2 garlic cloves, finely chopped

Steps

For the nuoc cham, whisk together the ingredients. Cover and set aside until ready to serve.

Place the soy sauce, sugar, fish sauce, lemongrass stalks and garlic in a small food processor. Season with a large pinch of white pepper. Process until smooth. Transfer mixture to a glass or ceramic dish. Add the pork cutlets and turn to coat. Cover and place in the fridge for 1 hour to marinate.

Preheat a barbecue or char-grill to high. Remove the pork from the marinade and cook for 3-4 minutes each side or until cooked to your liking. Set aside for 5 minutes to rest. Serve with steamed rice or salad and the nuoc cham.
